1 lb. lean tender beef
1/4 c. butter or margarine
1/4 c. flour
3 tsp. paprika
1 tsp. salt
1 1/4 c. milk
1 T. instant minced onion
1/8 tsp. garlic powder
1 bouillion cube
4 oz. can mushrooms, drained
1/4 c. catsup
1 T. lemon juice
1/2 c. sour cream

Directions:

Cut beef into thin strips. Brown quickly in hot butter or margarine. Lower heat. Blend in flour, paprika and salt. Stir in milk. Cook, stirring frequently, until sauce boils and thickens. Blend in all remaining ingredients except sour cream. Simmer 15 minutes, stirring occasionally. Just before serving, stir in sour cream. Serve over hot cooked rice.

If desired, leftover cooked beef may be used. When sauce has boiled and thickened, add beef strips and heat a few minutes to blend flavors. Stir in sour cream and serve.

This has been my fallback recipe for big groups for a very long time. The recipe can be increased easily and it can be prepared ahead of time. I'm sure there are ways to update the recipe but when you get used to doing it one way it's easy to continue those patterns.
