4 medium-size green peppers
½ c. raw rice
1 lb. ground beef
1 medium onion, chopped
1 egg
salt and pepper to taste

Directions:
Directions:
Slice stem end from each pepper, save top. Scoop out seeds and wash peppers. Put 1-2 tbsp. rice in the bottom of each pepper. Set aside. Mix ground beef, chopped onion, egg, and salt and pepper. Stuff peppers with mixture. Place tops back on peppers. Place in a covered casserole and bake in a 350º oven for 45-50 minutes. When almost done, squirt ketchup over tops. *Do not poke peppers in the bottoms, the juice from the peppers helps cook the rice*
