2 10 oz pkg frozen chopped broccoli, thawed
1 C instant rice
1 10.75 oz golden cream of mushroom soup
1 10.75 oz cream of chicken soup
1 1/4 C milk (little more)
4 C Shredded Cheddar
1 TB butter
1 clove chopped garlic
1 stalk chopped celery
1 large chopped onion
salt & pepper to taste
2 sleeves crushed Ritz crackers mixed with 4 TB melted butter

Directions:
Cook broccoli and rice according to package directions. Preheat oven to 350º In a medium saucepan over low heat, mix soups & milk, gradually stir in cheese until melted. Be careful the cheese doesn't burn. Melt butter in large skillet over medium-high heat, cook & stir celery, onion & garlic until soft. In a large mixing bowl, combine broccoli, rice, soups & cheese mixture, celery, onion & garlic. Season w/salt & pepper. Pour into a 9x13 baking dish. Top with crushed crackers mixed with melted butter, if desired. Bake 45 minutes, until bubbly & light brown. Can be cut in half.
