3 cups flour
3 tablespoons sugar
3/4 cup unsalted butter
6 tablespoons shortening
1 egg yolk
2 teaspoons lemon juice or white vinegar
6-8 tablespoons ice water

Directions:
Directions:
Cut butter and shortening together with flour, sugar and salt. Mix egg yolk, lemon juice and 4 tablespoons water together and add to dry ingredients. Add remaining water, 1 tablespoon at a time, until dough sticks together. Divide into two balls; flatten each into a disc and wrap in Saran. Chill 30 minutes before rolling out. Prick, and bake at 450 for 10-12 minutes.
