1 package white cake mix
2 tablespoons flour
1 cup plus 2 tablespoons water
1/4 cup vegetable oil
1 teaspoon almond extract or vanilla, if desired (I use almond)
4 egg whites

Directions:
Directions:
Preheat oven to 325º. Generously grease bottom of two, 8" or 9" pans; dust with flour.
Beat all ingredients in large bowl on low speed, scraping bowl constantly until moistened. Beat on medium speed, scraping bowl frequently for 2 minutes. Do not overbeat. Divide evenly between pans. Bake for 35-40 minutes for either 8" or 9" cakes.

Note: If baking in a 9"x13" pan, bake for 55 minutes, checking after 45 minutes.
