Pouulet Au Vin Blanc Au Chasseur Recipe

2 1/2-3 lb chicken
1/4 lb mushrooms
2 peeled, diced tomatoes
2 finely chopped shallots
1/2 pint dry white wine
1/4 lb butter

Cut chicken and season with salt & pepper

Saute in butter until golden brown

Add mushrooms & shallots, cover & cook slowly until mushrooms are golden

Add tomatoes & garlic, cover pan until chicken is cooked

Arrange chicken on a platter

Add wine to sauce, season to taste & pour over the chicken

Sprinkle with parsley & serve very hot

*Sauce may be thickened with flour/water mixture
