1 cup plus 2 tbsp flour
1 tsp baking soda
1/2 tsp kosher salt
10 tbsp unsalted butter, at room temperature
3/4 c dark brown sugar
1/2 c white sugar
1 egg plus 1 yolk
3/4 c refrigerated peanut butter, at room temperature
1 tsp vanilla extract
1/2 c semisweet chocolate chunks
Sea Salt (optional)

In a medium mixing bowl,whisk together flour, soda and salt. Set aside. With electric mixer, beat butter and sugars until light and fluffy. Add egg and yolk, then peanut butter, then vanilla, beat until combined. Add dry ingredients, beat on low speed until you can no longer see flour. Mix in chocolate. Drop spoonfuls on a parchment-lined baking sheet. sprinkle with sea salt (optional). Bake in a preheated 350º oven until just barely set and slightly puffy (7-9 minutes). Rotate the pan half through baking. Cookies will appear slightly underbaked when done. Cool completely on pans set on wire racks.
