1 can Shoepeg corn (12 oz), drained
1 cn black eyed peas (15 oz), rinsed & drained
2 avocados
*2/3 c chopped cilantro (no stems)-fresh for best results
2/3 c chopped green onions
1/2 c chopped tomatoes
1/4 c olive oil
1/4 c red wine vinegar
1 clove garlic, minced
3/4 tsp salt
1/2 tsp pepper
1 tsp cumin

Mix the ingredients

Chill for at least 3 hours

Serve with frito or Tostito Scoops
