1 pkg. Butter cake mix
1 1/2 cup evaporated milk
2 large eggs
1 can crushed pineapple, drained. (Reserve juice and 3 Tbsp. pineapple for icing. Separately)
3/4 cup powdered sugar
1 cup coconut
Directions:
Directions:
Preheat oven to 350º
Combine cake mix, evaporated milk and eggs in large mixing bowl.
Beat on low speed for 3 minutes. Stir in 1 cup pineapple. Pour batter in prepared pan.
Bake 30 to 35 minutes until done. Cool 15 minutes.
Combine powdered sugar and 2 Tbsp pineapple juice. Smooth over cake.
Sprinkle with 3 Tbsp reserved pineapple and coconut.
