1 1/2 cup vegetable oil
2 cups sugar
4 eggs
2 cups flour
2 tsp soda
3 cups finely grated carrots
1 tsp. salt
2 tsp cinnamon

Icing:
3/4 stick butter
1 box powdered sugar
8 oz. cream cheese
2 tsp. vanilla
1 cup nuts, chopped

Directions:
Directions:
Beat eggs well, add oil and beat well. Add sugar and beat. Sift all dry ingredients add to egg mixture. Add carrots by folding into cake mixture.
Make 2 round layers, or 1 sheet cake
Bake 35 to 40 minutes at 350º until test done with toothpick.
Cool cake completely before icing.

Icing:
Cream 3/4 stick butter with cream cheese. Mix well, add powdered sugar, vanilla and nuts.
Mix well. Spread on to cooled cake.
