White tortilla chips
Vegetable oil
1 chopped green pepper
1 chopped red pepper
4 carrots
1 medium onion, chopped
3 minced garlic cloves
¾ - 1 lb. chicken or turkey strips
3 large tomatoes, chopped
1 can diced chilies
1 tsp. chili powder
⅛ c. (or less!) chopped cilantro
1½ tsp. ground cumin
1½ c. frozen corn kernels
6 c. chicken broth
Juice of lime
1½ c. shredded Monterey Jack cheese
salt, pepper to tast

Directions:
Directions:
To oil in dutch oven add green & red peppers, carrots, onion, garlic & chicken. Cook, stirring often, until onion is soft & chicken is cooked through. Add tomatoes, reduce heat to medium & cook, stirring occasionally. Add chili powder, chilies, cilantro, salt, pepper, cumin, corn & chicken broth. Heat to boiling, reduce heat to low & simmer uncovered. Stir in lime juice.
Put tortilla chips (broken up) & cheese into bowl. Put soup over. Enjoy!
