1 cup potatoes, diced
1 cup onions, diced
1 cup celery, diced
1 cup carrots, diced
1 tsp. poultry seasoning
1/3 cup butter, melted
1/2 cup flour
2 cups chicken broth
1 cup half and half
Salt and Pepper to taste
4 cups chicken, cooked and chopped
2 pie crust

Directions:
Directions:
Preheat oven to 400º.
Saute onion, celery, carrots, and potatoes in butter for 10 minutes.
Add flour to mixture, stirring well. Cook one minute stirring constantly.
Combine broth and half and half.
Gradually stir into vegetable mixture. Cook over medium heat stirring until thickened and bubbly.
Stir in salt and pepper, add chicken and stir well.
Put pie shell into baking dish, Pour chicken mixture into shell. Top with 2nd shell.
Cut slits to allow steam to excape
Bake for 40 to 50 minutes or until pastry is golden brown and filling is bubbly and cooked through
