6 medium Russet Potatoes
1 pt. sour cream
10 oz grated sharp cheddar cheese
1 bunch scallions, finely chopped
3 Tbsp. milk
1 tsp. salt
1 tsp. pepper
2 Tbsp. butter
1/2 C. bread crumbs (optional)

Directions:
Directions:
Cook potatoes w/ skins in boiling salted water until tender NOT SOFT.
Cool. Peel. Grate w/ food processor. Place in a large bowel. Add sour cream, cheese, onion, milk, salt & pepper. Mix. Place mixture in greased casserole dish (9x13). Slice butter pats and place on top or melt butter in small pan and add bread crumbs. Mix well and scatter on casserole.
