8 oz. pasta
4 skinless, boneless chicken breasts, cut in to cubes
1 large onion, chopped
4 cloves minced garlic
2 Tbsp. olive oil
2 - 14.5 oz cans diced tomatoes
2 - 8 oz. cans tomato sauce
1 tsp. dried Italian seasoning
1/2 cup heavy or light cream

Directions:

Cook pasta according to package directions; drain.
Meanwhile, cook chicken, onion, garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until chicken is no longer pink. Drain off fat; return chicken and vegetables to skillet.
Stir in undrained diced tomatoes, tomato sauce and Italian seasoning. Bring to boil; reduce heat. Simmer, uncovered, about 10 minutes or until slightly thickened. Slowly add cream, stirring constantly. Serve over hot pasta. Sprinkle with pepper & garnish with green onions if desired.
