Coconut Pie Recipe

1 C. sugar
1/3 C. flour
2 C. milk
3 eggs, separated
1/2 tsp. salt
1 Tbsp. butter
1 tsp. vanilla
2/3 C. coconut

Meringue:
3 egg whites
1 tsp. cream of tarter
pinch of salt
1/4 c. sugar

Directions:
Directions:
Mix and stir first three ingredients in a saucepan. Cook over medium low heat until it thickens. Separate 3 eggs. Stir yolks. Save egg whites in a separate bowl for the meringue. Add a few teaspoons of the hot mixture to the yolks and stir. (This will keep the yolks from getting lumpy). Add the yolk mixture back into the saucepan. Cook until mixture is thick and can mound. Add salt, butter and vanilla and stir and cool. Stir in coconut. Bake in baked pie shell with meringue on top.

For Meringue: Beat egg whites while slowly adding the sugar, cream of tarter and salt. Beat until stiff and sugar is dissolved. Bake until meringue is a golden brown (about 10 minutes) in 350º oven.
