1 CUP CANNED/COOKED PUMPKIN (NOT PIE MIX) - LIBBIE BRAND RECOMMENDED
1 CUP SUGAR
1 CUP OIL
1/2 CUP BUTTERMILK
2 EGGS
1 AND 2/3 CUP FLOUR
2 TEASPOONS PUMPKIN PIE SPICE (MORE CAN BE ADDED TO TASTE)
1 TEASPOON BAKING SODA
1/2 TEASPOON SALT
OPTIONAL: 1 CUP CHOPPED WALNUTS

1. BLEND FIRST 5 INGREDIENTS TOGETHER
2. ADD REMAINING INGREDIENTS AND BLEND ALL AGAIN. LET MIX SIT AND PREHEAT OVEN TO 350 DEGREES
3. PLACE CUPCAKE CUPS IN MUFFIN TIN AND POUR IN MIX.
4. COOK AT 350 DEGREES FOR APPROXIMATELY 20-25 MINUTES. USE TOOTHPICK TO CHECK MUFFINS.
