3 eggs
2 cups sugar
1 cup oil
1 Tbsp. vanilla
2 cups zucchini, peeled and grated
2 cups flour
1 tsp. lemon rind, grated
1 tsp. cinnamon
1/4 tsp. baking powder
1/4 tsp. soda
1 tsp. salt
1 cup pecans chopped

Beat eggs until light and fluffy. Add sugar, oil and vanilla, mixing well. Add zucchini and stir thoroughly.
Sift flour, cinnamon, baking powder, soda and salt. Add to mixture stirring until smooth.
Add chopped nuts and lemon rind. Stir.
Bake in 2 greased and sugared loaf pans.
350, 1 hour.
