1 to 2 T. cracked black pepper
3 cloves garlic minced
2 tsp. dried thyme leave
1 well- trimmed beef tenderloin (4 lbs.)
Salt to taste

Directions:
Combine pepper, garlic and thyme and press evenly onto all surfaces of the beef. Place roast on a rack in a shallow roasting pan. Roast on 425 for 50-60 min. for medium. Remove beef when the thermometer registers 135 for medium-rare. For medium, 150. Let beef stand for 20 min. while tented with foil. Temperature will continue to rise approx. 10 while resting.
