1 cup butter
3 cups white cornmeal
1 cup all-purpose flour
2 T. sugar
2 tsp. baking powder
1 1/2 tsp salt
1 tsp baking soda
7 large eggs divided
3 cups buttermilk
3 cups soft bread crumbs
2 med. onions diced(2 cups)
1 large bunch of celery, diced(3 cups)
1/2 cup finely chopped fresh sage
6 cans condensed chicken broth undiluted(10.5 oz cans)
1 T pepper

Make Cornbread: Place 1/2 cup butter in a 13 x 9 dish Heat in over at 425º for 4 min. Combine corneal and next 5 ingredients: whisk in 3 eggs and buttermilk. Add hot butter into batter, and stir until blended. Pour batter back into greased pan. Bake at 425º for 30 min. Let cool

Crumble cornbread into large bowl and stir in bread crumbs and set aside. Melt remaining 1/2 cup butter into a large skillet over medium heat and add onions and celery and sauté until tender. Stir in sage and sauté 1 more min. Stir vegetables , remaining 4 eggs, chicken broth, and pepper into the cornbread mixture. Pour evenly into a lightly greased 13 x 9 pan and a 8 inch pan too! Cover and chill for 8 hours.

Bake uncovered at 375º for 35-45 min. until golden brown.
