1 star anise
1 ginger slice
onion
8 CUPS WATER
CUP SOY SAUCE
CUP RICE WINE
1 BUNCH CILANTRO
4-INCH LENGTH GINGER (3 OUNCES), CUT INTO PIECES AND SMASHED
3 POUNDS BEEF SHANK, TRIMMED
8 OUNCES DRIED WHEAT NOODLES
5 ouNCES BABY SPINACH
1 Tsp CHILI-GARLIC SAUCE, PLUS MORE TO SERVE

toast spices and ginger and an onion
throw together with water soy s, rice wine and beef sh, simmer 2.5 hours

Transfer beef, strain broth

cook noodles, put in broth, put in spinach

put noodles in bowl, pour over broth, chili garlic sauce to taste
