1 Lb sausage
8 eggs beaten
2 cups Monterey Jack, cheddar or Colby/Jack
1 stick butter
1 c milk
1/2 to 3/4 c flour
1 tsp baking powder
1 1/2 cups small curd cottage cheese
1 can Rotel (drained)

Directions:
Directions:
Stir together, eggs, cheese, butter , milk, flour and tomatoes in a bowl.

Pour into a buttered 9 x 13 pyrex baking dish

Bake at 350 for 30 minutes or until brown and fluffy
