CRUST & TOPPING:
2 cups all-purpose flour
1/2 cup packed light brown sugar
3/4 cup butter, melted
1/2 cup quick oats
1 tsp. cinnamon
1/2 cup chopped pecans

FILLING:
2/3 cup sugar*
3 Tbsp. cornstarch
1-1/4 cups water*
1 tsp. cinnamon*
1 tsp. vanilla
3 cups peeled diced tart apples
*You can substitute 1-1/2 cups of apple cider for the sugar and water and cinnamon

Directions:
Directions:
Combine the crust/topping ingredients with a fork. Set aside 1 cup for topping. Press the remaining crumbs into a 9" pie plate; set aside.
Combine sugar, cornstarch, water and cinnamon (or apple cider and cornstarch) in a saucepan; bring to a boil. Cook and stir for 1 minute or until thickened. Remove from heat, stir in apples and vanilla. Pour into crust; top with reserved crumbs. Bake at 350º for 40-45 minutes or until crust is golden brown,
