1/3 cup seasoned bread crumbs
1/3 cup crushed Corn Flakes (or Rice Krispies, or Rice Chex, or Corn Chex)
3 Tbsp. grated parmesan
1/2 tsp. salt
1/4 tsp. pepper
Any other seasonings you like
1-1/2 pounds haddock (or cod, or any meaty white fish you like) fish fillets, cut into 1" cubes (I buy the frozen haddock, and cube it while it's still partially frozen.)
1/2 stick of butter, melted

Directions:
Directions:
In a shallow bowl, combine the bread crumbs, cereal crumbs, cheese and seasonings. Dip each cube in melted butter to cover, then coat with the crumb mixture. Place on a foil-lined baking sheet. Bake at 375 for 15-20 minutes.
