1 lb pkg pinto beans, sorted and rinsed
6 slices bacon or chunks of ham
2 lg onions
2 cloves garlic, chopped
1 tbsp dried oregano leaves
1 tbsp chili powder
1 tsp salt
1 tsp ground cumin
5 cups water
1 15-oz can tomato sauce
1/3 c. firmly packed light brown sugar

Directions:
In large bowl, place beans and water to cover 2 inches above them, set aside to soak overnight

Cut bacon or ham

In a dutch oven or heavy kettle, cook bacon until crisp

Reserve fat from bacon to saute onions in , about 5 minutes

Add spices, drained beans and water, cover and heat to boiling

Reduce heat to low, simmer beans until tender but firm about 45 minutes

Add tomato sauce and sugar to beans, increase heat and cook util sauce thickens,
stirring occasionally.
