Ingredients:  
1-2 pounds peeled and chopped butternut squash
1/2 onion
4 carrots, peeled and large cut
2 apples, peeled and larch cut
3 cloves garlic
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 T EVOO
4-5 cups chicken stock
salt and pepper to taste

Directions:
Directions:
Sautee squash, carrots, apples, onion, garlic in EVOO 5-7 minutes. Add other spices and mix for 1-2 minutes. Add chicken stock and simmer for 30 minutes. Puree with a food processor or immersion blender when all is soft. Add stock as needed.
