20-30 Kumquats
2 Oranges
2 Lemons
water (3 cups water per 1 cup combined fruit)
sugar (1 cup sugar per 1 cup combined fruit)

Directions:
Wash the fruit. Slice oranges and kumquats, and remove seeds. Finely chop both fruits,rind and all, into tiny slivers, measure by cups and then place in to large pot. Add water ( 3-1), cover and let sit overnight.

Bring pot to boil then reduce to a low heat. Let simmer until rinds are tender. Remove from heat and measure contents by cup again as it will have cooked down. Return the fruit to pot and add sugar (1-1) and 1/4 cup lemon juice. Bring back to a boil and let it thicken (220ºF) Remove from heat and skim foam off the top.

If you are canning, fill your sterilized jars, leaving a 1/2 inch headspace and process in waterbath for 10 minutes.
