Zucchini Brownies Recipe

2 c sugar
1 t cinnamon
4 eggs
1 t baking soda
1 c oil
½ t baking powder
1 t vanilla
¼ t salt
2 c zucchini, shredded
4 T cocoa powder
2 c flour

Directions:
Directions:
Beat sugar, eggs, oil, vanilla, and zucchini together. Add flour, cinnamon, baking soda, baking powder, salt, and cocoa. Batter will be very thin. Bake in a greased and floured 9X13 inch pan at 350º for 35-40 minutes. Cool in plan and then frost with cocoa frosting.
 

Cocoa Frosting

4 T margarine
3 1/2 c powdered sugar
1/3 c milk
1/4 c cocoa
1 t vanilla

Sift the powdered sugar if it's lumpy. Combine all ingredients and beat until smooth. This makes quite a bit of frosting. You might want to use only half a recipe for the brownies.
