4 Tbl. chopped Rosemary ( that has been sautéed in 2 Tbl. extra virgin olive oil)
2 packages dry active yeast (1/2 oz. total)
2 Tbl. sugar
3 cups warm water
1 Tbl. Kosher salt
1/4 cup etra virgin olive oil
8 cups bread flour

In a large mixing bowl (use your Kitchen Aide bowl if you have one), combine the yeast, sugar warm water and 2 cups of flour.
Mix until the yeast dissolves and starts to bubble (about 10 minutes).
Using the dough hook, add the olive oil, Rosemary, salt and 6 cups of flour.
If doing this by hand, incorporate the dough slowly.
Mix until kneaded being careful not to over mix.
Take the dough out of the mixture and knead to incorporate all the flour.
Place in a large mixing bowl that is lightly coated with olive oil.
Cover with a clean towel.
Let dough double in bulk.
Portion out for pizza, Mediterranean bread and calzones.
This dough freezes well too.
Preheat oven to 400 degrees. Roll out 1 pound of dough. Grease a baking sheet or line with parchment paper. Place dough on sheet. Sprinkle with parmesan cheese and course salt. With a fork poke holes throughout dough.
Bake for approximately 25-30 minutes or until golden brown.
