3 1/2 cups unbleached, AP flour
2 tsp. baking soda
4 tsp. cinnamon
1/2 tsp. cardamon (optional)
1 1/2 tsp, Kosher salt
4 large eggs, room temperature
1 1/2 cups light brown sugar
3 cups pumpkin puree (canned)
1 cup canola or vegetable oil
1/2 cup orange juice
1 1/3 cup chocolate chips, white chocolate or walnuts

Directions:

In a large bowl mix the flour, baking soda, cinnamon, cardamon and salt.
In a medium bowl, whisk the eggs and sugar together until combined.
Whisk in the pumpkin, oil and orange juice together.
There will be a few lumps....just do't over mix.
Mix in the chips or walnuts of choice.
Grease 3 bread pans with melted butter or pan coating and pour batter in evenly.
Bake at 350º for 30 minutes then turn down to 325º for another 20-25 minutes or until a toothpick comes out clean.
Let cool then serve.

You can freeze them also. Wrap well in plastic wrap.

This is Sarah's favorite bread but only with the chocolate chips! It is nice to have around for breakfast when the kids come home for the holidays.
