1 c all purpose flour
1 egg
1 c milk
2 t baking powder
t salt
3 T butter or margarine, melted
2 T sugar

Directions:
Directions:
Mix flour with baking powder, salt, and sugar in a medium bowl. In a small bowl, beat the egg. Add milk and butter and beat until well mixed. Pour dry ingredients and beat only until combined--it will be lumpy. Preheat griddle or skillet. Use cup batter for each pancake. Cook until bubbles form on surface and edges become dry. Turn and cook 2 minutes longer or until nicely browned on the underside.

I hate the thought of using pancake mix, since pancakes are so easy to make anyway. This is my favorite recipe that came from the very first cookbook I by bought as a teenager. It's pretty well-used now.
