"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Preheat the oven to 350 F.
Beat together the eggs, flour, sugar, butter, baking powder, and lemon zest until smooth in a large mixing bowl and turn into the prepared loaf-shaped tin.
Bake in the pre-heated oven for about 35 minutes, or until golden brown, shrinking away from the sides of the tin and springy to the touch.
While the cake is still warm, make the lemon drizzle topping. Mix together the sugar and lemon juice and pour over the warm cake.
Leave to cool a little and loosen the sides of the cake, then lift the cake out of the tin.

Personal Notes:
Justin makes this cake for special occasions. Itís delicious and far better than any other lemon cake Iíve had. To me, itís a pound cake on steroids. Justin also likes to serve it with butter cream icing on the side Ė but thatís when youíre praying for diabetes.
