Cut up chicken pieces, wash chicken over running cold water, drain off all excess water
Buttermilk
Flour
Black Pepper
Paprika
Oil for frying

Directions:
Directions:
Put cut up chicken in a large bowl....pour enough buttermilk over chicken to cover
Cover chicken with plastic wrap
Place in refrigerator
Marinate for one hour

Place enough flour in a sack or large plastic bag
Season liberally with salt, black pepper and paprika
Heat oil in a large skillet (use a cast iron skillet if you have one) use medium heat to fry chicken

Place 4 or 5 pieces of chicken from buttermilk marinate in the season flour (shake off excess buttermilk first)
Shake the chicken pieces in the season flour to coat and place in hot oil
Let chicken brown on one side, turn then brown on the opposite side (depending on size should take approximately 20 to 25 minutes to be well done). Drain on paper towel; continue cooking until all pieces are cooked.
NOTE: It may take more than 20 or 25 minutes for chicken to be well done--depends on the size of the chicken and the chicken pieces.

Careful with chicken, clean all surfaces with a disinfectant if chicken came in contact with those areas, plus wash hands with soap and running water. Be Careful and aware that chicken is raw meat and can carry bacteria.
