cup shredded extra sharp cheddar cheese
cup shredded jack cheese
2 Tbsp melted butter
2 cloves garlic, minced
Salt & pepper
1 Tbsp flour
cup heavy cream
cup chicken broth
1 head cauliflower cut into inch florets
1 tsp dry mustard
tsp dried thyme

Directions:

For topping, heat oven to 450. Pulse bread, 1 Tbsp cheddar, 1 Tbsp jack, 1 Tbsp butter, 1 clove minced garlic, ⅛ tsp salt, and ⅛ tsp pepper in food processor until coarsely ground.

Heat remaining butter, remaining garlic, and flour in a dutch oven over medium heat, stirring constantly until golden and fragrant, about 1 minute. Slowly whisk in cream and broth. Stir in cauliflower, dry mustard, thyme, tsp salt, and tsp pepper and bring to boil. Reduce heat to medium low and simmer covered stirring occasionally until cauliflower is nearly tender, 6 to 8 minutes. Off heat, stir in remaining cheddar and jack until incorporated.Taste for seasoning adding more salt & pepper if necessary.

Pour mixture into baking dish and top with bread crumbs. Bake until crumbs are golden brown and crisp, 10 to 15 minutes. Let cool 10 minutes. Serve.
