Squash Casserole Recipe

5-8 med. squash
1 lg onion
4 eggs
1 (8oz) Sour Cream
1 cup Shredded Cheese
1 pkg. Ritz Crackers or similar
1 stick Margarine (melted)
Salt and Pepper

Pre-heat oven 350

Cut squash into small to medium pieces. Cook squash and onion until tender.
Salt and pepper to taste. Mix eggs and sour cream together well. Add to mixture.
Pour into baking dish. Sprinkle cheese on top. Crumble crackers on top and add margarine
on top of crackers. Bake for 25-35 minutes.
