1.5 lbs. salmon fillets
1 10 oz. can diced tomatoes with lime juice and cilantro, well drained
1/2 C. mayonnaise
salt and pepper

Directions:
Directions:
Cut salmon into 4 servings; season with salt and pepper. Preheat large sauce pan on medium high for 2-3 minutes. Combine tomatoes and mayonnaise in medium bowl. Coat both sides of salmon, using tongs, with tomato mixture and place in sauce pan. Add remaining tomato mixture to pan. Cover and cook 3-5 minutes on each side or until fish is opaque and separates easily wit a fork. (Cooking time will very depending on the thickness of the fillets.)

Serve over Wild Rice and Spinach.
