2 c. raw zucchini, grated
3 eggs
1 c. oil
2 c. sugar
3 tbsp. vanilla
3 c. flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp. salt
1 tbs. cinnamon
1 c. chopped walnuts

Directions:
Directions:
Mix ingredients in order listed. Pour into two 9 x 5 inch greased loaf pans. Bake at 350 for 1 hour. Keeps well and freezes well.
