3 cups all-purpose flour
3 eggs, beaten in small bowl
2 cups sugar
1 cup oil
1 teaspoon vanilla
2 cups grated zucchini (with skin)
1 cup chopped nuts or raisins
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup sour cream

Directions:
Directions:
Preheat oven to 350º. Grease 2 loaf pans

Sift flour and remaining dry ingredients into a large bowl. Add the rest of the ingredients to the flour mixture, making sure that it is mixed well. Scrape bowl often and mix for several minutes.

Pour evenly into the 2 loaf pans. Bake for 1 hour, 10 minutes. Check with toothpick, and when it comes out clean, remove. Cool pans on wire rack before removing.
