2 cups elbow macaroni
1 stick butter
1/4 cup minced white onion
3 tbsp. flour
2 cups light cream
1/2 cup dry white wine
2 cups (or more) sharp cheddar
1/2 cup breadcrumbs
salt and fresh black pepper
Cayenne pepper (to taste)
1/2 tsp paprika

Directions:
Cook pasta until almost done, drain and set aside.

in large skillet melt 1/2 stick butter and add breadcrumbs, toast until lightly brown

set aside breadcrumbs, wipe pan and use for next step

Melt remaining butter and add onion, stir over low heat until onion is just translucent

Add flour and dry seasonings
cook 2-3 min over low heat
Add wine
Gradually add cream
Simmer on low heat until sauce thickens and smooth

Add cheese, stir till melted

Add pasta

Pour into greased casserole dish and top with breadcrumbs

Bake @ 350º for 20 minutes
