1 pound dried black eyed peas
3 garlic cloves, minced
½ pound salt pork, cubed
1 ham bone
½ pound cooked ham, cubed
¼ t crushed red pepper
1 large onion, chopped
3 c cooked rice

Directions:
Directions:
Rinse peas and pick over, removing all foreign particles. cover with cold water in a large pot. Bring to a boil for a minute and remove from heat. Cover and let sit for an hour. In a large skillet, saute the salt port to render the fat. Add onion and garlic and cook until onion is soft, about 5-6 minutes. Add the onion mixture along with the ham bone and seasonings to the pot with the peas. Cover and cook for about 1½ hours or until the black eyed peas are tender, but not mushy. Season with salt and pepper to taste. Serve over hot cooked rice.

Mom liked making Hoppin' John, I think more than we liked eating it. Maybe not, though.
