Ingredients: 2 lbs redskin potatoes or waxy potatoes like Yukon Gold 3/4 c ranch dressing 3/4 c mayonnaise 3/4 c minced celery 1/2 c minced red onion 1 cup washed minced fresh dill salt and pepper to taste

Directions: |
Directions:Boil potatoes skin on for approx 20 minutes until soft but not mushy (Use peeled white potatoes if preferred) Drain, cool to room temperature, and refridgerate until cold
Mix all other ingredients together Slice cold potatoes into a bowl in layers, pouring dressing over ea layer so you don’t have to stir too much
If salad dries after assembling sprinkle a little water over it and gently stir to loosen it up
Everyone I’ve served this salad to thinks they don’t like dill until they taste it here... use it liberally! |
