2 lb Yukon gold or white potatoes- peeled/cubed
2 can Chicken broth
2 cup Milk (or half and half )
6 slices Bacon - cooked
1-2 cup Cheddar cheese - shredded
1/3 cup Green onions - sliced
1/2 cup Sour Cream

Directions:
Directions:
Place cubes potatoes in bowl and cover with water and microwave on high for 5 min stirring midway through. Drain . Add broth and milk and stir. Microwave on high for 10 min - stirring mid way through. Gently mash potatoes with a potato masher,
Reserve 4 T each of bacon, cheese and onions and set aside.
Add remaining bacon , cheese and onions to soup and stir.

Use reserved bacon, cheese and onion for garnish.
