1 box cake mix – (Butter Pecan makes outstanding banana bread, but yellow or white works great as well)
1 stick butter, melted
2 eggs
3 very ripe bananas
Chopped walnuts, optional

Directions:
Directions:
Preheat oven to 350º. Lightly coat bread loaf pan with cooking spray. Mash and blend the butter and bananas to form your liquid base for the bread. Pour cake mix on top of banana/butter mixture. This creates a barrier to keep the hot butter/banana mixture away from the eggs. Add the eggs to a small well in the middle of the cake mix and stir slowly to introduce the eggs gradually to the hot butter. Mix to blend well. Mix in walnuts, if desired. Pour into prepared bread pan and add top with additional walnuts, if desired. Bake at 350º for 45 minutes to one hour, until a fork or toothpick can be inserted into the middle and come out clean. Allow the bread to cool completely before removing it from the pan.

I made this using a yellow cake mix, no butter, and about 7 bananas. Oh my goodness. I also greased the pan with butter and then coated it with brown sugar. Moist and yummy--Marcy
