8 oz. orzo pasta
1 tsp. Kosher salt
1/4 cup pine nuts (roasted in a sauté pan) on medium high for 4 minutes, stirring constantly.
1 clove minced garlic
6 oz. feta cheese, roughly crumbled
2 oz. chopped Kalamata Greek olives, pitted
6 oz. fresh baby spinach
1/2 cup chopped red onion
3 Tbl. extra virgin olive oil
1 Tbl. balsamic vinegar
1 Tbl. red wine vinegar
pinch of basil. and tarragon
Salt and black pepper to taste

Cook the pasta according to the directions.
In a food processor mix the spinach, garlic and olive oil until combined.
While the orzo is still warm, mix everything together and let set in fridge at least 1 hour before serving.
