Dressing
1/3 cup coconut or extra virgin olive oil
2 1/2 Tbl. soy sauce
1 1/2 Tbl. honey
1 Tbl. sesame oil
1 Tbl. mirin
3 Tbl. fresh lemon juice
Kosher salt and freshly ground pepper

Salad
1/2 Savoy cabbage, finely shredded
1/4 small purple cabbage, finely shredded
4 mini cucumbers halved and thinly sliced
2 carrots, coarsely grabbed (about 1 cup)
1 cup cilantro leaves ( optional)
2 Tlb.. toasted sesame seeds
1/2 cup Chinese dry noodles

Directions:
Directions:
In a small bowl, whisk all the ingredients and season with salt and pepper. Set aside.
Mix all the salad ingredients together except for the Chinese noodles.
Add the dressing and mix thoroughly. Just before serving add the noodles and serve.
