3 eggs
1 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
2/3 can pumpkin
3/4 c. flour
1 tsp. baking soda

Filling:
8 oz. cream cheese
1 tsp. vanilla
2 T. butter
1 c. powdered sugar

Directions:
Directions:
Mix eggs, sugar and pumpkin together. Let stand for 5 minutes. Add dry ingredients. Line a 10 x 15 inch cookie sheet with wax paper (butter edges of paper). Bake at 300º for 18 minutes.

Next, spread powdered sugar onto the inside of a clean tea towel . Remove pumpkin roll from pan carefully using the waxed paper; place onto prepared tea towel. Roll the cake, while hot, in the towel. Allow to cool completely. Mix together the filling ingredients and spread evenly over unrolled cake, then roll back into a log.
