2 1/2 c. flour
1 2/3 c. sugar
3 tsp. baking powder
3/4 tsp. salt
3/4 c. shortening
1 c. milk
1 tsp. vanilla
1/2 c. chopped cherries
1/2 c. chopped walnuts or pecans
4 egg whites, beaten

Directions:
Directions:
Sift dry ingredients into a bowl. Add shortening and milk. Beat for 2 minutes on medium speed. Add cherries, chopped nuts and vanilla. Fold in beaten egg whites. Pour into pans. Bake at 350 for 25 to 30 minutes.
