Mom's Basic Spaghetti Sauce Recipe

1/4 cup olive oil
1 tablespoon chopped onion
1 clove garlic, chopped
1 can (12 ounce) tomato paste
1 can (15 ounce) tomato puree
2 teaspoons salt
1/4 teaspoon baking soda
1/4 teaspoon black pepper
1/4 teaspoon sweet basil
1/2 teaspoon sugar
1 teaspoon oregano
1 quart quart water
1 1/2 pounds beef or pork neck bones

In a large saucepan, heat oil; add onions and garlic and cook until onion is browned. Let cool slightly, then stir in tomato paste, puree, salt, baking soda, pepper, basil, sugar, oregano, and water. Bring sauce to a boil, then lower heat so that mixture simmers. Brown neck bones in oil and add to sauce. Continue simmering for 2 - 2 1/2 hours. More water can be added if the sauce is too thick. Remove bones with a slotted spoon before serving the sauce over pasta.
