3 tbsp butter
3 large carrots, sliced
3 medium potatoes, diced
3 stalks celery, sliced
1 large onion, diced
2 cloves garlic, minced
1 pound ground beef
1 can corn
1 can vegetarian baked beans
1 15 ounce can diced tomatoes
1 tbsp better than bouillon, beef flavor
4 cups water
1 tsp dried thyme
salt and pepper to taste

Directions:
Directions:
In a large pot, melt butter. Add carrots, potatoes, celery and onion to butter and saute until onions are translucent. Add garlic and saute for about a minute. Add ground beef in small chunks and saute until no longer pink. Add water and bouillon (you could also use a can of beef broth and a can of chicken broth) Cook until the potatoes and carrots are tender. Add corn, baked beans and tomatoes. Simmer for about 20 minutes to meld the flavors. If you want to stretch the meat add more carrots, potatoes, corn and beans. This recipe also doubles well.
