Cream of Zucchini Soup Recipe

Avondale cookbook


2 C boiling water
3 chicken bouillon cubes
2 heaping cups shredded zucchini
1/2 cup chopped onions (sauteed)
1 C milk
sour cream
parsley (optional)

Add bouillon to boiling water. Stir until dissolved.
Cook zucchini and onions until tender in bouillon broth.
Remove from broth and puree in blender or food processor.
Return to the broth.
Rinse blender with the 1 C milk and add to broth.
Season to taste and heat until warm.

Serve with 1 Tbsp of sour cream per serving.
Sprinkle with parsley if desired.
