Graham cracker crumbs
1 c sugar
1 lb small curd cottage cheese
4 eggs, beaten
2 (8oz) cream cheese, softened
1 pint sour cream
⅓ c corn starch
2 T lemon juice
c margarine, melted
1 t vanilla

Directions:
Directions:
Grease a 9 springform pan and dust with graham cracker crumbs. Sieve cottage cheese into a large mixing bowl. Add cream cheese. Beat with high speed until well blended and creamy. Continue beating at high speed and blend in sugar and then eggs. Reduce speed to low. Add starch, lemon juice, and vanilla. Beat until well blended. Add melted margarine and sour cream. Blend on low speed. Pour into prepared pan. Bake at 325 about 1 hour and 10 minutes or until firm around the edges. Turn off oven. Let stand in oven for 2 hours. Remove and allow to cool on rack. Chill and remove pan.

This was Mom's favorite cheesecake recipe. It was labor intensive, but worth the work and the wait.
